St. Lawrence Valley Honey is the work of Michael and Tess Mac Cue, residents of Dekalb Junction, NY, with 35 years “in the bees”. We are a small, non-migratory beekeeping outfit whose hives remain within central St. Lawrence County year-round.
Spring Honey has a pronounced floral flavor because of the Dandelion component. It refuses to speak quietly. Other nectars include Rocket (Arugula), Birds Foot Trefoil, early tree blossoms, perhaps Honeysuckle, and numerous other minor sources. It generally has a brighter, sharper flavor. Not every year produces harvestable spring honey; sometimes the bees only gather enough to keep their hive running as they grow their workforce.
Summer Honey is generally mellower, lighter in color, and rich in subtle flavors. It will consist of all types of Clovers, as well as Milkweed, Locust, Hairy Vetch and other wild and domestic field plants. If Basswood (Linden) blossoms have produced generously, it can even taste minty. The summer honeys of the St. Lawrence Valley hold up against the best found anywhere else in the country.
We ship your order on Monday via UPS in our custom insulated boxes and it should arrive within 1-3 days from shipping. Tracking info will be sent to you via email.
We do not require a signature nor do you need to be home for most delivery locations. We do recommend you open and store your order as soon as possible.
