Pork Roasts
Berkshire or Kurobuta ( black pigs) are known for their well marbled, distinctively red pork which wins hands down in a flavor competition.
All of our meat is vacuum sealed & flash frozen to ensure freshness. Chops are cut between 1" and 2" thick. Roast sizes vary between 2-5 lb. each.
We recommend thawing and allowing your chops to warm up to room temperature before cooking ( about 60 minutes.) This prevents overcooking the exterior of your pastured pork. We like our meat to have an inside temperature of 130-160F ( lower than the USDA recommended 145-175F).
