July 2026 CSA Newsletter
We have officially entered the 'not enough hours in a day' part of summer. Add a stomach bug for me last week and I am feeling quite behind. However, I have FANTASTIC news for those of you who love sausages. Our butcher opened his sausage catalog and said "choose a few you want to offer" and I squealed with delight! So, this month we have a few limited run sausages for you to include in your share OR you can purchase them for $1/lb. Off the list price - one of the perks of being a CSA member. Just tell us which ones & how many you would like.

- Smoked Andouille Links ( 4 oz. 4/lb. package.) Not pictured.
- Chorizo loose sausage - no more pulling it out of the casings!
- Bratwurst ( ( 4 oz. 4/lb. package.) - Cooking this for lunch
- Maple Breakfast Links ( 1 oz links, 16 per 1lb. package)

New calves, nearly everyday. A few moms will be in charge of babysitting while the herd goes out to graze. As they get older, they will go along with the main herd, settling deeply in the grass to nap while the munching of grass from herd mates is the melody of their dreams.
SUMMER SCHEDULE - Shipping ONCE a month*. We pack up all of your boxes, load a u-haul and drive three hours south to a large UPS hub near Albany, NY. Eathon captured this beautiful 'Fire Sunrise' over our Amish neighbor Sam's farm. It was stunning.
He starts his day by releasing our three dogs, Schultz ( soon to be 10!), Kramer and Otto. Then filling buckets of feed and releasing the chickens to their breakfast. A hoard of white feathered birds race across the grass to the feed while the dogs run ever further loops to ensure the ranch is safe. I finish my stretching and coffee and begin breakfast. As soon as breakfast is cleaned up, the job list allocated and off we go. This morning John took off to the far back field, the Seymour pen as we have named it from the large farm that was adjacent to us. The beef herd has mowed it to perfection and he moved them to the Oat pen. Eathon & Cole moved the water tanks & minerals on and now prepare to rake the hay we have down drying. Another neighbor will come (The Reed family) to bale them up for us later this afternoon. I will start lunch; mashed potatoes, sauerkraut, and our new Bratwurst sausages. While they rake, John & I will get as many orders packed and ready to ship next week. Working in the garden this evening will finish out the day and sleep will be sweet indeed. We are exhausted and it is wonderful. Next month; Chicken butchering begins. Which means, all of the above but we add in chicken butchering, too.
Interested in coming to see and feel summer on the ranch? We are happy to show you around, just give us a heads up so we can carve out a little time. This area above Lake Placid is so beautiful, and unknown by many. Come and visit, enjoy our 'Hinterland' of New York.
Warmly,
John, Kassandra, Eathon & Cole
