JUNE 2025 CSA NEWSLETTER


The sun rises over damp meadows all to the calls of birds, either mating calls, territorial warnings or perhaps just a shout of rejoicing; It's SPRING! The kind of days that wake you gently, feeds you well, and hasn't hit the drowsiness of summer. My brother's wedding was on Saturday and what fun was had by all. In typical agrarian form, we were all done partying by around 8pm and ready to go home. Animals still need fed and watered, even on wedding days. What we are suppose to be attacking is fencing, however the number of storms that have blown through in the past few months means that removing trees that are either downed or dying has to happen first. Upside, we may have all the wood we need for winter by June! Staying ahead of all the grass though...TBD. 

 These little fluffs are going to be out on pasture shortly. It has only been a week since they hatched and already they are feathering out. Once feathered they can then roam outside the warmth of the Hennery and explore the wide variety of natures buffet.

Speaking of chicken... we know some of you absolutely love it and are waiting ever so patiently. We cut ourselves a bit short last year and sold more than I wanted. My goal for this year is to set aside more chicken to carry all of you through more months of the year. 

What I really want to hear from you is WHAT KIND? Would you prefer more roasting chickens ( whole birds) or really love the ease if Cuts ( breast, legs, thighs, wings, etc.?) Please let us know! Even if it means that you enjoy chicken only once in a while, it helps us forecast what we will need. Thank you in advance. 

 

We plan on stocking coffee from Raquette River Roasters ( Organic, Free Trade and delicious!) You can add it to your share for monthly delivery or just request it to be added to each share when you want some.

Share invoices come out on the 21st of every month and I will post this newsletter on our blog shortly after. I will also email you the link so you don’t miss the news. If the first shipping date doesn’t work for you, just let us know and we can arrange a later ship day. Here is the upcoming schedule!

Share options for this month ( below is an example share for a Small Beef, Pork & Chicken, your share may be different) are pretty flexible, let us know if you would like to switch out any cuts or need something for a special dinner.  CHICKEN OUT OF STOCK TILL AUGUST

  • Beef Chuck Roast ( Bone-in or Boneless), Brisket or Short Ribs
  • Ground Beef or Patties ( 1-2 lbs.)
  • Ground Pork, Sausages ( Breakfast, Sweet or Hot Italian, Chorizo or Kielbasa) or Bacon
  • Pork Shoulder Steak, Pork Cutlets, or NEW Smoked Ham Steak 1/2" thick
  • Pork Chops ( BI or BL) or Pork Tenderloins
  • Sirloin, Sirloin Tip, Sandwich or Stew
  • Your choice of extras; Ground Beef or Pork, Sausages, Tallow, Lard, Snack Sticks, Jerky ( for spring hikes or the extra sport snack), Summer Sausage, Maple Syrup, Honey, Honey Creams ( Plain, Citrus, Autumn Spice, or Cinnamon), Coffee or something for your Pet ( All Chicken or All Beef Pet blend in 3# packages)

 

 

QUICK MEAL SEASON From the comfort food of winter to the quicker meals of spring, we have made the switch. Some of my last chicken cuts went into a Chicken Bacon Corn Chowder - liked this one, but omitted the flour and just pureed some of the potatoes to give it a bit of thickness. For dinner, we pan fried a package of the Mild Breakfast Sausage links and added relish, cheese, fruit and called it supper. When food tastes great, the meals can be simple and still delicious. 

Remember those suits we did all the measurements on and ordered for the wedding? Yeah, they didn't get sent on time and 7 days before the wedding still hadn't been shipped. We rousted through our clothing and started washing and ironing, and yet, prayed that these suits would still arrive. Wednesday, nothing. Thursday, nothing. Friday afternoon, just before I left for the rehearsal dinner, the suits arrived. The men tried them on, Cole began pressing them, I left and whispered  "Thank you Lord, for answering the smallest of my desires, too."  We get to experience this a lot; the feed truck that shows up after a mechanical delay as we are feeding out the crumbs. The check to pay a bill that is covered by a last minute sale. When it is impossible to fix yourself, He shows up.
