JULY 2025 CSA NEWSLETTER

Early morning and mid afternoon every day we bring water & minerals to the beef in their current pasture. I try to go along on these as often as I can, especially during calving season. Finding a new calf hidden in the shade or taking those first stumbling steps is one of my very favorite sights. So far the field is dotted with tiny versions of the adults, spunkier versions whose main goal is to run in circles with their pasture mates until they get the call from their mother. A "bath" ( she licks them over, confirms it is fact her calf, and then mealtime on tap - fresh milk, always ready to go.) Check out this video of us moving the beef herd early this morning before the heat of the day.
I heard whispers of heat coming our way and as we got closer to our ship date noticed it was bang on the days where your boxes would be in transit. We have decided to wait and ship your shares the following week. Shipping on Monday June 30th and most of you will get your boxes on Tuesday the 1st of July. If that does not work, we are tentatively planning on shipping again on July 15th. Please let us know if you want us to hold your order for later and THANK YOU for understanding. Not a single one of us wants to waste this beautiful meat.

- July Shares Shipping; June 30th or July 15th
- August Shares Shipping; July 29th
- September Shares Shipping; Aug. 26th
Share invoices come out on the 21st of every month and I will post this newsletter on our blog shortly after. I will also email you the link so you don’t miss the news. If the first shipping date doesn’t work for you, just let us know and we can arrange a later ship day.

- Sirloin, Sirloin Tip or Sandwich Steak

- Ribeye, Rib, T-bone, Porterhouse, Filet or NY Strip Steaks
- Your choice of extras; Ground Beef or Pork, Sausages, Tallow, Lard, Snack Sticks, Jerky ( for spring hikes or the extra sport snack), Summer Sausage, Maple Syrup, Honey, Honey Creams ( Plain, Citrus, Autumn Spice, or Cinnamon), Coffee or something for your Pet ( All Chicken or All Beef Pet blend in 3# packages)
We have coffee from Raquette River Roasters ( Organic, Free Trade and delicious!) in sample size 2 oz. or half pound bags. A Medium roast or Dark! Honey from the MacCue family and Maple Syrup from the Huntley Farm are back in stock as well.
Some days during summer test me. Heat & humidity make me grumpy. It's not just laying in the sun on beach towel, it is trying to move hot chicks into a shed to protect them from an imminent thunderstorm that could kill them and they did not get the memo, plus biting flies trying to carry me away, and oh yes, I forgot my car windows were open. When that shower opens up though... that washes it all away. My frustrations melt, the wonder of steam rising from hot bodies, the way light reflects off water droplets, the smell of soil, grass, and life mixed with the breeze that can give you goosebumps.
June seems to be filled with transitions. School to vacation. New jobs, homes, and routines. I find cooking during the summer to be one of the easiest and least fussy. Slow cook a pork roast - Bam, pulled pork sandwiches. Sear some steaks, or grill burgers and sausages. Add any number of veggies or fruits. Refreshing and yet keeps us fueled. Simplicity really lets the meat, fruit or veg shine in its natural state. I save the fancy recipes and more savory meals for fall, & winter. Cole planted some potatoes I had ordered from Azure Standard in the same field as the chickens. Fenced it off and every day we walk by and note how it is growing. I'm dreaming of young potatoes with plentiful butter, topped with chives and maybe some dill, along with a good steak and a salad. We hope you delight in the glorious summer meals!
