Eathon & Cole discussing why bees like to reside in his tiny home stairs? I'm not sure exactly what they were discussing, but it is usually over my head. Currently the discussion has been how to modify our steam kettle with a pressure tank to increase the heat produced by several hundred degrees... an exciting development for y'all as this could mean - broth?! All these hours spent packing orders are not done in silence but usually with music playing and loads of conversation. My FAVORITE part. Tons of ideas are shelved but a few make it to the planning, and finally to the finished stage, like this one below. 

Eathon & Cole researched hours of YouTube plumbing DIY in order to install the Steam kettle and get it working. Last week we rendered our first batch of beef fat and are so happy with the results. If you ever wanted to try Tallow in your share - just mention it! 

That time of the year has arrived once again. The chicken harvested in late summer of 2025 is almost gone. We have whole chickens, breast, wings, plenty of livers/hearts, some backs and feet but after this month's distribution, you probably won't see as much until July or August of this year. If you really love chicken and want to load up, let us know. We have plenty of beef & pork though and extras for those who are loving the honey, maple syrup, meat snacks or Tallow Balm!

Here is the upcoming shipping schedule;

  • March Shares Shipping; Mar. 2nd or any other week
  • April Shares Shipping; Mar. 30th or any other week 
  • May Shares Shipping; April 28th ( depending upon weather)

Share options for this month. Below is an example Small Beef, Pork & Chicken Share, your share may be different and we are open to customizing your share - just ask! 

  • Berkshire Pork Shoulder Roast ( BI or BL) OR Whole Chicken
  • Ground Beef (1-2), Patties or Sweet Beef Links
  • Ground Pork, Sausages ( Breakfast, Sweet Italian, Hot Italian, Chorizo or Smoked Kielbasa) OR Smoked Bacon
  • Chicken Drumsticks, Leg/Thighs, Wings, Livers, Backs, Feet or Necks
  • Beef Short Ribs, Osso Bucco, Sandwich or Sirloin Steak
  • T-bone, Rib, Porterhouse, NY Strip or Ribeye Steak
  • Or Your choice of extras; extra Ground Beef or Pork, Sausages, Bacon, Snack Sticks, Jerky, Summer Sausage, Huntley's Maple Syrup, MacCue's Honey/Creams, Raquette River Coffee, or All Chicken or All Beef Pet Blends.

 

My hands are SO dry in this picture. After weeks of rendering beef fat, washing so many pots, rendering it again, straining, testing, more washing ( SO much washing) that the tallow balm was the only thing keeping me from flaking away. Last month a ton of you tried it out and would love to have your feedback.

I'm getting that antsy feeling that the last few weeks of winter is here and spring is around the corner. Might be delusional... might be planting flower seeds (winter sowing) but either way, the urge to spring clean the house is hitting hard. The men are creating a large "TO-DO" list for summer. An extra hour of sunlight helps, too. I wonder if this is what bears feel like when waking up from hibernation, slightly disconcerted, incredibly hungry, and curious. If you are still firmly in hibernation, enjoy it. I'm sure we have a snowstorm or two waiting for us in March. Stay warm!
