Burger season has begun! We are missing the fresh lettuce & tomatoes, but that will come soon. Cows are heavy with calf and ensuring they have plenty of hay bales ( with plenty of room for their extra wide loads) are high priority. Cows do in fact tip over, not usually that spectacularly, but as they lie down and others nearby shift and move, they can get find it impossible to get up ( called "casting themselves.") Quite the predicament and deadly for large animals who need to move. Walking amongst the herd is always exciting as we see generations of families; grandmothers, daughters, sisters, and of course... the lads.  

 

I've shared our favorite Steak Fajitas marinade recipe using our Sandwich steak. If you make it in bulk, it freezes well for another easy to fry up and serve meal. Which is good, everyone is going in different directions!

Marinade

  • 2 lb. Sandwich steak, sliced into thin strips. Can also use Sirloin!
  • 1/3 cup Lime juice
  • 1/4 cup Pineapple juice
  • 2 TB Worcestershire sauce
  • 3 TB Olive oil
  • 1 TB minced garlic
  • 2 tsp Cumin powder
  • 2 tsp Chili powder
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1/2 tsp Black pepper
  • 1/2 tsp Red pepper flakes
  • 1/4 cup chopped cilantro ( optional)

Combine all ingredients in a fair size bowl. Once mixed, add the cut up meat and marinate for 1/2 hour to overnight. Thinly slice sweet peppers, onions or whatever other veggie you would like included. This cooks within a few minutes!  You can top a baked potato, rice, put in a wrap, or top a salad. Add guacamole, sour cream, salsa, sauteed corn, lettuce and shredded cheese. DELICIOUS and fresh. 

SUMMER SCHEDULE -  Shipping ONCE a month*. We pack up all of your boxes, load a u-haul and drive three hours south to a large UPS hub near Albany, NY. They deliver almost everyone's order the next day which makes a HUGE difference and keeps your meat frozen. *We can ship other days, but do not guarantee the meat will arrive frozen. A heads up for y'all so you can plan ahead!

  • September Shares Shipping; Sept. 8th ( If cool enough can ship other weeks)

  • Or Your choice of extras or swap out above cuts for; extra Ground Beef or Pork, Sausages, Bacon, Snack Sticks, Jerky, Summer Sausage, Huntley's Maple Syrup, MacCue's Honey/Creams, Raquette River Coffee, or All Chicken, All Beef Pet Blends or any of the Tallow Balms.

For any of you traveling this summer, if you would like to double or triple your shares in the coming months and skip having them shipped while you are away, just reach out to us!

Over 1000 of these tiny fluff balls are getting picked up at the hatchery near Fultonville, NY next week. The first day is hectic, stress inducing, and a bit crazy. From picking them up and traveling north while listening to them peep in the back ( it's not quiet!) to getting them settled into their brooder where they discover the waiting water & feed. Some chicks decide they want a bath first, dunking themselves in the waterers thoroughly before running for the hills ( escaping the brooder and the heat lamp). Patience is the name of the game. In a mere 3-4 weeks their feathers will come in and they will be able to regulate their body heat and out they go to the green pasture calling them to explore. 

Onward, march to Spring!
