June 2026 CSA Newsletter
The first calf was born a few days ago, the prettiest fawn color with a pearly white head. She is proving elusive to capture a picture of, already an expert at hiding within the herd. Many, many more are due to calve soon and I'm so pleased with how they are all looking this spring.
Piglets are thriving, as are the chicks and while we have plenty of pork at the moment the beloved chicken cuts from last summer are gone until the August distribution.
We know lots of you have various cook-outs, end of school bashes and the like and if you are hoping to fill your freezer with extra Ground beef, Burger patties, any kind of sausages, bacon or steaks - let us know. The shares can be customized to your uses in the coming months!
SUMMER SCHEDULE - Shipping ONCE a month*. We pack up all of your boxes, load a u-haul and drive three hours south to a large UPS hub near Albany, NY. They deliver almost everyone's order the next day which makes a HUGE difference and keeps your meat frozen. *We can ship other days, but do not guarantee the meat will arrive frozen. A heads up for y'all so you can plan ahead!
Here is the upcoming shipping schedule;
- June Shares Shipping; May 26th ( ONCE A MONTH)
- July Shares Shipping; June 30th ( ONCE A MONTH)
- August Shares Shipping; Aug. 4th ( ONCE A MONTH)
- September Shares Shipping; Sept. 8th ( If cool enough can ship other weeks)

- Beef Chuck Roast ( BI or BL), London Broil, Brisket, Bottom Round, or Rump
- Ground Beef (1-2) AND/OR Patties or Sweet Italian Links
- Ground Pork, Sausages ( Breakfast, Sweet Italian, Hot Italian, Chorizo or Smoked Kielbasa) OR Smoked Bacon
- Pork Chops, Bone-in or Boneless
- Pork Cutlets, Shoulder Steak, Stew, Kabob or Ribs
- Beef Short Ribs, Osso Bucco, or Kabob
- Or Your choice of extras or swap out above cuts for; extra Ground Beef or Pork, Sausages, Bacon, Snack Sticks, Jerky, Summer Sausage, Huntley's Maple Syrup, MacCue's Honey/Creams, Raquette River Coffee, or All Chicken, All Beef Pet Blends or any of the Tallow Balms.

From snow covered fields to the wind blowing waves through thick grass, all in a matter of weeks. Blows my mind each year. I've a little pet project. The beef herd grazed a field near the window of my living room. I purchased a bag of Buckwheat seed and plan to hand spread it over the pasture just before a rain shower. By early July, if my project is a success, the fields will be in flower, lovely white blossoms. The beef will enjoy grazing lush buckwheat and we shall enjoy the beauty of these fields.
If you find yourself under water over the summer, behind with laundry, a little gritty feeling on the floors, know that we shall be right there with you. Summers bounty means outside hours are lived to the fullest.
