The freezer is filling up with beef & pork we just got back from the butcher, tomorrow we build shipping boxes, today I finish and send out this newsletter. Last week I jarred up more tallow, ordered coffee, maple syrup, honey and all the things you can include in those boxes. I wish each of you could spend the day distributing these shares. It is hard to explain the feeling of sending out the abundance of literally years of work and have it be so richly enjoyed. 

Sipping my Yolky Coffee and straining the latest jars of Tallow. We just added a new coffee from Seán & Diana and it is yummy. Their Winter Dark roast is still my current favorite, but this is a contender... let me know if you want to add any of the following to your share

Starting next month we will be only shipping ONCE a month. We pack up all of your boxes, load a u-haul and drive three hours south to a large UPS hub. They then deliver almost everyone's order the following day which makes a HUGE difference and keeps your meat frozen vs our normal 2 day transit timeframe. We only do this between April & Sept/Oct. but I wanted to explain why our shipping schedule goes from fairly flexible to more strict. We CAN ship from the home ranch, but thawing does occur unless you Overnight the box which can be expensive. A heads up for y'all so you can plan ahead!

Here is the upcoming shipping schedule;

  • April Shares Shipping; Mar. 30th or any other week 
  • May Shares Shipping; April 28th ( ONCE A MONTH)
  • June Shares Shipping; May 26th ( ONCE A MONTH)

Share options for this month. Below is an example Small Beef, Pork & Chicken Share, your share may be different and we are open to customizing your share - just ask! 

  • Chuck Roast ( Bone-in or Boneless), Brisket, Rump, Bottom Round or London Broil
  • Ground Beef (1-2) or Patties
  • Ground Pork, Sausages ( Breakfast, Sweet Italian, Hot Italian, Chorizo or Smoked Kielbasa) OR Smoked Bacon
  • Chicken Drumsticks, Leg/Thighs, Breast, or Whole Chicken
  • Pork Chops ( Bone-in or Boneless)
  • Pork Cutlets, Shoulder Steak, Ribs ( Baby Back, Country Style, Spareribs)
  • Or Your choice of extras; extra Ground Beef or Pork, Sausages, Bacon, Snack Sticks, Jerky, Summer Sausage, Huntley's Maple Syrup, MacCue's Honey/Creams, Raquette River Coffee, or All Chicken, All Beef Pet Blends or any of the Tallow Balms.

A few of you have asked why the Tallow Balm is called "Minta's" and that is my nickname. Above, you are witnessing me in my natural habitat. Taking full advantage of my diminutive form to over pack a shipping box. They say I'm overzealous, I just say I'm ambitious. If you have enjoyed the Tallow balm, would you do me a favor and send your testimonial? I would LOVE to include it on the website for the tallow balm - thank you in advance!

Lunch today is this delicious Bacon Carbonara. I will dice up our bacon, some mushrooms, kale and parsley from the freezer stash and sauté them. Cook some fettuccine ( we like the wider noodles, but you could use just about anything) and shred some parmesan or gruyere cheese and mix with eggs to form a cheesy sauce. Mix it all together and grab a jar of salsa from the pantry to top it. The guys are out working up wood and will be hungry when they come in. This is one of those dishes I know they will not walk away from hungry.
