26 more days till Spring! We may still be under cover of snow but at that point, we know warmth will return sooner rather than later. One of our projects for the past few weeks is tracking down Non GMO & Soy Free chicken feed. Chickens graze a lot! However they also are grain eaters, along with worms, berries, small frogs and whatever other treats they come across. The good news is, we just heard from our friends the Smiths ( Rustling Grass Farm ) that Green Mountain Feeds might be able to supply us. Chicks will need to be ordered and everything readied for them to arrive by mid April. This time will go by so quickly.

We have something new! Tallow for cooking! This is made in a certified place and uses the Suet fat ( highest quality) for rendering down into our Tallow. in convenient 12 oz. containers. We are including the option in our CSA Share below, let us know if you would like to be the first to try it! Found this pie recipe to try next. You can also use this for making the now growing number who use Tallow Balm instead of lotion which I have been using for years now.

Maple Syrup tapping has begun and soon the syrup houses that dot our county will begin to steam as the water evaporates off of the sap. Ever tried our syrup over pancakes with a side of bacon? We do this for supper sometimes, a bit of a treat for a cold day outside. You can add some syrup to your share, or honey... The MacCue's have been experimenting and have a few new Honey Creams to offer; Plain, Cinnamon, Autumn Spice, and Citrus. They are $9 per 10 oz. glass jar. Let me know if you would like us to include one or all four!

Share invoices come out on the 21st of every month and I will post this newsletter on our blog shortly after. I will also email you the link so you don’t miss the news. If the first shipping date doesn’t work for you, just let us know and we can arrange a later ship day. Here is the upcoming schedule!

  • March Shares Shipping; March 3rd or another week
  • April Shares Shipping; April 7th or another week
  • May Shares Shipping; April 29th - Summer Schedule
  • June Shares Shipping; May 27th - Summer Schedule

Share options for this month ( below is an example share for a Small Beef, Pork & Chicken, your share may be different) are pretty flexible, let us know if you would like to switch out any cuts or need something for a special dinner.  CHICKEN OUT OF STOCK TILL JULY

  • Boneless Pork Loin or Shoulder Roast
  • 1-2# of Ground Beef 
  • Ground Pork, Sausages ( Breakfast, Sweet or Hot Italian, Chorizo or Kielbasa) OR Bacon
  • Beef Sandwich, Cube, Chuck, Top Round or Sirloin steak
  • T-bone, Porterhouse, Rib, Ribeye, Filet or NY Strip steak
  • Osso Bucco, Beef Stew or Tallow for cooking NEW!
  • Pork Tenderloin, Baby Back Ribs, or extra Bacon

High spirits from the cows today as we watered and put out more hay. Temperatures were in the mid 20's and with the sun shining it was about as comfy as a well fed cow can get. No flies to contend with and the only downside, no fresh grass. Later when spring breezes start to blow and the cows can smell the dirt warming, the ground waking up and thrusting forth the blades of grass, they will start to moan. It's a sort of longing. Kind of like my wait for the first strawberries of the season. Until then, we all have about 90ish more days until we can re-create this style of grazing once again.  

Last things, thank you to all of you long time CSA members who help us stay solvent with your loyal support. Not just stocking your pantry with our meat and poultry, but with you exceptionally kind words and encouragement. For those of you who are new, welcome and thank you for joining us. Our goal is to feed you well, not just food for your body but also a connection to the land and animals.
